This is a recipe that takes me back to my childhood. When I was sick my mama would make this pudding and then put vanilla ice cream on top while it was still very warm. The ice cream would melt down and it was sooo wonderful. She also used this pudding as the filling for chocolate meringue pie. Between her lemon and chocolate meringue, I don’t know which I would choose for my last meal if I were on death row for some reason.
Chocolate Pudding
1/2 cup powdered sugar
1/2 cup granulated sugar
3 Tbls flour
2 Tbls cornstarch
2 Tbls cocoa powder (best quality)
1/4 tsp salt
Whisk well to sift out the lumps and then stir in 2 cups of cold water. Whisk until smooth and then place your pan over medium heat. Cook, stirring constantly, until the pudding is smooth and thick. This will take about 15 minutes. Remove from heat and add 1 Tbls butter and a tsp of vanilla. Pour into bowls and allow to cool slightly before serving.
