Okay, so I told two of my friends that I had already posted this, but I hadn’t because quite frankly, I forgot to. It’s wasn’t even a draft…I really missed the boat on this one. A co-worker of Matthew’s and a friend of mine introduced us to Cafe Rio and we ate there, and then we couldn’t stay away. Right now, I want to go there so badly that I can hardly stand it…but I digress. Quite by accident I ran across a copy cat recipe, or should I say 5 copy cat recipes for their pork barbacoa. I looked them over and took what I think are the best qualities of all and have come up with my version. I am planning to cook it up tomorrow and then make tamales on Friday. I can’t wait to have the yummy deliciousness of it and if it all works out I will definitely post the results and recipe!
I would really like to find a recipe for Macaroni Grill’s stuffed mushroom appetizer. It’s one of my favorite dishes there, especially since they changed their menu.
Well, I am off to finish my grocery list and to take the Bean to get a haircut.
